Describe the feature you'd like

Hi,

This really is a great project! I don't like that the AI features are going through Ollama, a startup that is well on the road to building a moat around their product. Can we get support for any OpenAI compliant api that we provide so that people can use llama.cpp/actual OpenAI/Claude/whatever as their backend?

Describe the benefits this would bring to existing Karakeep users

Avoid the coming rug pull with ollama/use a better backend

Can the goal of this request already be achieved via other means?

Have you searched for an existing open/closed issue?

I have searched for existing issues and none cover my fundamental request
