I feel like I've looked everywhere, but while there are options for modifying the Gmail label assigned to SMS, Call logs, and WhatsApp messages, I couldn't find anything like it for MMS. Could this feature be added sometime in the future?

it could be, but it would make restoring MMS messages more difficult should this be added at some point
