Thanks to PR #3141 it has become easier to build shad with Qt, you only have to select the preset with Qt in the name instead of modifying the cmake command arguments, documentation wasn't updated since that change so this PR updates it (also decided to delete one of the many mentions of the current Qt version in order to not have to update it if shad updates Qt).
