Currently on 2.10.4 and I see there is a new Docker image available but I do not see a changelog that corresponds with the new build.

It was pushed to :latest, but last time this happened without a release and I jumped the gun, it broke my install.

Should we update this? If so, what changed?

Where were you expecting the release notes to show?

A cursory glance gives you the changelog on this repo under the releases: https://github.com/NginxProxyManager/nginx-proxy-manager/releases/tag/v2.10.4
