Describe the feature you'd like

What's new.

Ideally, this would show a notification in the bottom left that KaraKeep has been updated. It would then either take you to a webpage, or show a modal dialog with a very clean description of what changed.

Maybe a checkbox or some way to mark at as "read".

Ideally, a link to a page that covers notes for each release, ideally with a breakdown on how to use each feature, but at minimum a list of important changes and features.

Describe the benefits this would bring to existing Karakeep users

Nice and easy way to keep up with changes to KaraKeep.

Can the goal of this request already be achieved via other means?

Not easily.

Have you searched for an existing open/closed issue?
