Description of changes: Adds PascalCase serialization for ActionMapping and MethodActionMapping which were missing it. Adds tests for the serialization of these types in addition to another test focused on policy_type serialization.

Note: We are making updates to ensure PascalCase serialization across our public types, this PR covers the policy generation package.
