My team would like to use Hopscotch but we would prefer to set it up with the Auth/Sync features on our self hosted servers or possibly on Azure.

At the moment, Hoppscotch has there's tight coupling with Firebase. We're working on a self-hostable Hoppscotch instance which will allow users to configure app with their own preferences. Follow the project and watch this space for updates.
