Why I can not set proxy as same as postman,the postman is use the system proxy

Postwoman being a web app, we can't explicitly use system's proxy - but you can still either use custom proxy url (settings > proxy) or configure browser to use system proxy.

Installing postwoman browser extension (link in readme) solves this issue by acting as a middleware between web app and system.
