This PR adds support for uninstall-hooks. I've wanted to make the install-hooks script symmetric for a while now, it's especially important to support https://github.com/acunniffe/git-ai/issues/349

I also took the opportunity to

refactor / untangle all the agent install code since we've got a bunch of these to maintain now
added a --verbose flag to hide hook output by default
