Not really an issue, just a question. The title says it all 😄
Would be a great way to avoid having to have Wormholy or similar in the app for seeing network requests on device without needing an SSL certificate.

It's a good point, but we don't support for now.
Currently, you have to use add Atlantis to your iOS app, then inspecting the data via macOS. The reason we implement it firstly because it's easier to inspect the traffic (big screen, more previewer features).
We will plan to add it to the Proxyman for iOS 👍
