It's technically not possible. If you set the HTTP Proxy on your iPhone to Proxyman on macOS (Guideline), by default, all traffic will go through Proxyman.

Thus, There is no way to define the HTTP Bypass on your iPhone (Unlike the macOS, they have this feature).

To workaround, you might right-click on some domains -> Tool -> Block List -> Create new rule with "Hide, but not block" option 👍
