🌟 Briefly describe the feature

Add support for latest release (version 1.0.0)

📝 Detailed description

Vikunja released the version 1.0.0 yesterday, but the current script is not updating or installing this version.
https://github.com/go-vikunja/vikunja/releases/tag/v1.0.0

Currenlty the script is using dl.vikunja.io as it's source, but the latest version does not have a -amd64.deb file included

Also the source can now maybe be changed to GitHub Releases.
Related issue: https://github.com/community-scripts/ProxmoxVE/issues/6698

💡 Why is this useful?

Because users can install the latest version or update existing instances to the latest version
