If I get another phone and use this backup, will all my sideloaded apps be transferred properly ? So I won't lose game progression and settings?

It will if you install LiveContainer with the same Apple ID on another device

How many days do I have to then install sidestore and make use of LiveContainer? Is it unlimited or is there a timeframe ?
That is presuming I get a new phone, sync from iCloud, then install sidestore
